On the evening of September 25, 2026, from 18:00 to 23:00, the National Marine Fisheries Research Institute (MIR-PIB) and the Gdynia Aquarium will host and present a dedicated sustainable food science showcase during the fourth edition of Pomeranian Researchers’ Night (Pomorska Noc Naukowców).

Every year, seafood processing generates large amounts of waste. In shrimp production, only about 40% of the biomass is edible, leaving millions of tons of shells as by-products. Yet these shells contain valuable compounds such as chitin, which can be converted into chitosan, a biopolymer widely used in food packaging industries, biomedical materials, and environmental applications.
